What is Green Coffee?

Before roasting, every coffee bean is green. Here is what that means — and how to enjoy it.

Green coffee is simply coffee before it has been roasted. It is the dried seed of the coffee cherry — pale green to grey-green in colour, hard, and with a grassy smell that is nothing like the coffee you know.

Green vs roasted

  • Green coffee is raw and unroasted. It tastes light and gently grassy — closer to a herbal infusion than a cup of roasted coffee.
  • Roasted coffee has been heated until the beans turn brown and develop the rich aromas, flavours and oils we associate with coffee.

How we make it easy
